What are Soya Beans?

These small, oval beans vary from creamy-yellow, brown and black in colour. In China they are known as "meat of the earth" and were once considered sacred. Soya beans contain all the nutritional properties of animal products but without the dis-advantages. They combine well with robust ingredients such as garlic, herbs and spices as well as making a healthy addition to soups, casseroles, bakes and salads.

Soya beans are also used to make tofu, tempeh, textured vegetable protein(TVP) flour and soy sauce.

Recipe:

Soya bean and feta pasta salad

Prep & Cook Time: 20 mins

Serves: 4

Ingredients:

200g fusilli pasta

200g soya beans, drained and rinsed

16 cherry tomatoes

100g feta cheese

180ml balsamic vinegar

Method:

1. Cook the pasta according to pack instructions, adding the beans for the final 3 minutes. Drain and rinse under cold water, then drain thoroughly.

2. Halve the tomatoes and stir through along with the dressing. Crumble over the feta cheese and season with ground black pepper.
